Frijoles Antioqueños - Traditional Colombian beans from Antioquia
Frijoles Antioqueños is a traditional dish from the Colombian region of Antioquia. It is characterized by its creamy texture and rich flavor that comes from slow-cooked white beans. Frijoles Antioqueños is often served with rice, avocado, fried plantains and arepas. Here you can find the original recipe from my time in Colombia.

- 3 cups beans
- 1 onion
- 2 tomatoes
- ½ bunch green onions
- 3 cloves garlic
- Salt
Soak the beans in water for six hours.
Cut the onion and tomatoes into small cubes.
Put some oil in the pot and heat it slightly. Add the onions and fry them lightly. Be careful not to burn your ingredients.
Finely chop the garlic cloves and cut the scallions into small pieces and add them to the pot.
Add the tomatoes to the pot and bring everything together to a gentle boil over medium heat.
Add the beans and fill with enough water to cover all the beans.
In the pressure cooker, cook the beans for about 30 minutes.
Salt is now used to season your beans.
Using a soup ladle, transfer the beans from the pot to a small bowl and serve.
- If you don't want to use a pressure cooker, you will need to simmer the beans on low heat for about three hours.
- You can use garlic to your liking.
