Colombian burrito with beef and pico de gallo

This Colombian burrito is made with beef, pico de gallo, avocado, and corn and reflects a typical combination of ingredients I had the pleasure of tasting on my trip through Colombia.

All over South America there are different ingredients for a traditional burrito, but this is a simple and delicious recipe that I remembered especially in Colombia.

A burrito with beef, avocado, corn and pico de gallo is a typical combination from Colombia and other countries in South America. Here I present you this simple and delicious recipe from my time in South America. With only a little effort you can prepare your own fresh burrito.

  • Cooking pot
  • Small bowl

Ingredients
  

  • 500 g beef
  • 1 avocado
  • 75 g corn
  • 2 wheat tortillas
  • 2 tomatoes
  • 2 cloves garlic
  • 1 lime
  • 2 onions
  • Oil
  • Salt
  • Pepper

Instructions
 

  • First heat water in a pot.
  • Meanwhile, wash the beef.
  • Peel the garlic cloves and add them to the water together with a halved onion.
  • Once the water in the pot is brought to a boil you can cook your beef for about 30 minutes.
  • In the meantime, cut the avocado in half, remove the pit, use a knife to cut the flesh of the avocado into cubes and then remove it from the skin with a spoon.
  • Now we prepare the pico de gallo.
    For this you just have to chop the coriander leaves, peel the tomato, cut the tomato flesh into small pieces, dice the other half of the onion into fine pieces and mix everything together in a small bowl. You can round off your pico de gallo with the juice of a lime or lemon.
  • Cut the second onion into fine pieces.
  • Once the meat is cooked, you can shred it into small pieces and fry them in a pan with some oil, salt and pepper.
  • Place fried beef, corn, avocado, onion and pico de gallo in the center of both tortillas.
  • Fold the tortilla over on opposite sides and then roll into a burrito.
  • For easier serving, you can wrap the burrito in aluminum foil and then cut in half.
