- 50 g Wild garlic
- ½ Lemon
- 150 g Butter
- Salt
- Pepper
Instructions
- Wash, dry and finely chop the wild garlic.
- Wash the lemon and grate fine pieces of the lemon peel with a grater.
- Beat the butter in a bowl with a whisk until fluffy.
- Add the wild garlic and lemon zest and season with salt and pepper.
- Spread the wild garlic butter on a piece of baking paper and roll it up.
- Refrigerate the roll.

Allium ursinum, as the wild garlic is called in Latin, is also known as witch’s onion or forest garlic. Wild garlic originates from large parts of Europe up to northern Asia.
