Pit

A pit is a traditional charcoal grill or smoker often used for BBQ. Pits are made of various materials such as steel, iron or clay and come in different sizes and shapes.

During BBQ, meat is cooked slowly on the pit at a low temperature and smoke to make it tender and juicy and give it a unique, smoky flavor. Pits can be fueled by wood, coal or gas and often have special fixtures to hang the meat or place it on grates.

There are several types of pits, including offset smokers, where the fire is lit in a separate compartment and the smoke is directed through a duct into the chamber containing the meat, or kamado grills, which are made of clay or ceramic and can maintain a high temperature.

Pits are often handmade and can be highly prized in the BBQ community. There are even competitions where pitmasters show off their skills and pits and compete for prizes. A well-made BBQ on a pit can be a real treat and accentuate the flavors and textures of the meat in a unique way.
