Mop Sauce
Mop sauce is an American sauce often used in BBQ, especially for spareribs and pulled pork. This sauce is also known as “mop” and is typically applied to the meat during cooking to make it juicier and more flavorful.
A mop sauce consists of a mixture of different ingredients that can vary according to taste. Typical ingredients include vinegar, mustard, ketchup, Worcestershire sauce, brown sugar and spices. The sauce is often prepared in a thin consistency so that it can be easily applied to the meat. Mop sauce is periodically applied to the meat as it cooks on the grill or smoker. This “mopping” ensures that the meat does not dry out and always remains juicy.
Also possible is a combination of a dry BBQ Rub and a subsequent application of the Mop Sauce during the grilling process.
Classic Mop Sauce is often used in combination with other BBQ sauces. Depending on the region and preferences, these BBQ sauces vary in flavor. Some popular varieties include sweet Kansas City BBQ sauce, spicy Texas BBQ sauce and hot Memphis BBQ sauce.
In a nutshell, mop sauce is an essential ingredient for the pitmaster any BBQ lover who wants their meat tender, juicy and flavorful. Whether for spareribs or pulled pork, using mop sauce can make the difference between good and great BBQ.
